Corn Chowder
This home-made soup is a great meal for any cool autumn day, or in my case when I have been playing with Tiny Tank and realized Sexy Soldier would be home in 20 minutes!
1 284 ml can of cream of potato soup
1/2 cup of 2% milk
1/2 cup of canned cream-style corn
1 small seeded and diced tomato
1/4 tsp of dried thyme
1/8 tsp of freshly ground pepper
1/4 cup of shredded Cheddar cheese
In a medium sauce pan, combine soup, milk, corn, tomato, thyme and pepper on medium heat. Bring to a boil, stirring constantly (so that it doesn't burn to the bottom of the pan). Spoon into serving bowls and sprinkle each one with a little bit of shredded cheese (note: the cheese goes really goopy so I would leave it as a side dish for my toddler). Let infant servings cool to a safe temperature.
Enjoy!!!
Yields 3 cups and is recommended for 12-18 months. (Hahaha!!! Sexy Soldier LOVES this soup and even requests it! If he only knew how EASY it was to make!)
